Muffin Top Project- Lime Poppy Seed

I had to take a little break from my muffin top project when we were in the middle of our two-month-long moving process. Now that we are unpacked, and have an overabundance of limes, I made the lime poppy seed muffins. And. They. Were. AMAZING. I made mini muffins because I couldn't find my regular size cupcake liners and I think that's what made them even more tasty and delicious. Or maybe it's because there is almost as much sugar in them as there is flour. Either way, they were by far the most amazing muffins I've ever had. I almost don't want to continue my muffin top project because nothing will taste as good as these little wonders. I also think I'm finally starting to accept the fact that it's good to have lumpy muffin batter. I just couldn't leave it lumpy before but I finally let go with these muffins and it paid off. Don't over mix. Lumps are good. Got it.

Muffin Top Project- Double Chocolate

Up next in the muffin cookbook was double chocolate.  Chocolate muffins with "white" chocolate chunks inside. (I didn't have enough white chocolate to melt on top and put chunks inside... but I had some white chocolate dyed red, so I used that for the chunks.)  And they were good.  It seems like most baked goods are better the next day... but I don't think muffins are included in that mix. They seem to be better sooner than later. So Everett and I ate one right away... while the chocolate was still melty.  Yep, definitely better that way.  Especially with a little milk.  In fact, it was so good he wanted more. But it was mostly for the chocolate on top.  So far, so good. The first ones were my favorite (chocolate chip), the second ones were Jake's favorite (Apple Cinnamon), and I think these were Everett's favorite. 

Muffin Top Project- Apple Cinnamon

Round two of the Muffin Top Project called for Apple Cinnamon muffins.  They were pretty tasty.  Even our super picky eater tried one. He didn't make it too far past the brown sugar cinnamon topping. But any regular eater would say that they were good, moist, and had a nice flavor with the real apple chunks. 

Muffin Top Project- Chocolate Chip

I have a muffin recipe book.  I bought it last year at a garage sale.  I have yet to make muffins in my adult life. That was until yesterday... I flipped thought my muffin book and tried to decide what muffins to make.  I decided that I'd just make all of them.  One at a time.  In order.  Julie and Julia inspired.  I will bake through my muffin book.
